Awesome Mexican Pizza!
Just because you’re trying to get in shape doesn’t mean you have to deprive yourself of good food. Case in point: the Mexican pizza. Going through a drive thru certainly won’t help, and most Mexican pizza recipes will skip out on the protein and overload you on cheese.
However, we’re going to hook you up with dish that packs a nice 1-2 punch of protein and healthy fats. We’ll use an avocado to make our own guacamole while using ground sirloin as our protein of choice. We’ll want to stick with sirloin here, as other ground meats will throw off the ratio of protein and fats. This pizza is also loaded with fiber, so consider that a bonus.
While you’ll top your pizza with some greens, UEFP clients will still need a side of vegetables to make it a complete meal. If you’re currently eating carbs with your meal plan, then simply skip out on the guacamole because carbs and fats eaten together don’t always go well. Instead, you can have some rice and veggies on the side.
|3 ounces||Free range ground sirloin (already cooked)|
|2||“Food for Life” corn tortillas|
|4 tbsp||Refriend beans (from a can)|
|1/3 cup||Shredded raw cheese|
|½ cup||Chopped spinach|
|Pink Himalayan sea salt|
|Taco sauce of choice|
|Fat free sour cream|
|1||Preheat the oven to 400 degrees|
|2||Using coconut oil spray, spray some on a sheet of aluminum foil|
|3||Spread a 2 tbsp of refried beans on each tortilla|
|4||Place half the beef on each tortilla|
|5||Spread each tortilla with the taco sauce, covering the beef and beans. Spread as much as you like.|
|6||Split the cheese in half between each tortilla; cover the beef as much as possible.|
|7||Place tortillas in the oven for 10 minutes|
|8||Take the avocado and mash it up. When it’s no longer solid, sprinkle in some salt and squeeze in the lemon wedge.|
|Optional Step||When 10 minutes is up, you can place the oven on BROIL (on high) for 2 minutes.|
|9/10||Take tortillas out of the oven, spread guacamole and sour cream and then top with chopped spinach|
